They tend to have a different flavour from more immature green olives and they can be cured in a variety of ways for different uses and flavour profiles. Suggested uses:

•Best also to serve with beer nuts in shot glasses as good accompaniment to happy hour drinks
•Add flavour to your casseroles and stews by chopping and adding them to other ingredients before cooking
