The Italian composer, Rossini, has been quoted as saying “One single drop of this vinegar from Modena with its refreshing and balsamic efficiency quickly restores me to health and a peaceful mind”.
It is true that quality balsamic vinegar can give a lift to any dish with its welcome zing, and it is the vinegars from the town of Modena in the Emilia Romagna region of Italy that are the most prized.
Rossini Balsamic Di Modena is slowly matured in small wooden casks made from oak, chestnut, cherry and mulberry, using the concentrated must of grapes from the local area. It is aged for 12 months producing an A-grade vinegar that is lusciously thick with an intense bouquet and rich, sweetness.
Drizzle a little on a salad, over vegetables, char-grilled meats or use it to finish a sauce for a burst of flavour.
