If there is one thing that you should remember when it comes to parmesan is that it should be grated fresh! There is nothing like the release of that sweet, zesty aroma when you freshly grate a block of parmesan over a plate of pasta, a bowl of risotto or even shaving it over a salad. It also retains its moisture and creaminess that way. If you use pre-grated cheese, a lot of the flavour will be lost which means you are likely to use more, which means more kilojoules! So, choose great parmesan, grate it fresh and you will get definitely lots of bang for your buck!
P.S. Please make sure to always wrap the block you are holding by the hand with a piece of baking paper or plastic wrap to ensure it doesn’t get contaminated.
