Green Olives are hand-picked and cured when they are unripe. They are normally cured by soaking in a solution of salt and water to make them less bitter. Green olives are often pitted and stuffed with pimiento, almonds, and and are often used in martinis. Green Valley Spanish Green Pitted Olives present the well-known and much-loved Hojiblanca variety of olives and are great for use in cooking or cold dishes when you don’ t have the time or energy to take the pits out yourself.
